I just toasted up and ate some seeds from yellow squash and green squash, that I'd cleaned out and let dry weeks ago. I thought they'd be really mediocre, but for mediocre, they were pretty good!

I'm cleaning out my "camouflage" squashes now, I let 'em sit too long and some got rotten at one end etc., but those digital-camo squash are not only hard to see in the field, they produce a thin-shelled, tasty seed.

With a lot of squashes, if you miss a few during the harvest for them as a vegetable, let 'em go and harves them later for seed. The "camo" ones are a type of zucchini.

Do you save our own seed as well as eat it?

Eat them seeds with all those beetles and bugs you eat.

I know about the bugs man, all I was asking was do you save seeds to plant more squash or eat them all?
