I'd like to start putting together videos of tunes where I record the audio and video of each part (guitar, banjo, mandolin, bass) separately and then layer them over each other. I already use Ableton Live with an audio interface for recording original tunes that I'm working on releasing someday, so I'm practiced at layering parts over a click track. But the video part of it I think would be fun just as an experiment.

Have any of you had any experience with editing audio and video in this manner? What kind of program do I need? Can I integrate my existing DAW? Do I really need a digital camera, or will a good smartphone camera work well enough?

Your phone camera should work fine.
You can record into your DAW and film with your phone while doing that. Then you just need to sync the audio and video. The two most popular apps for that are Adobe Premiere and Final Cut Pro.

Thanks! I'll give those programs a look.
