As requested:
10 oz (250 gm) Self raising flour
8oz (225gm) Margarine
60z (175gm) Sugar
80z (225gm) each Sultanas, Currants,
40z (110gm) each Chopped Dates,Glace Cherries
2 Eggs
Small tin (170g) Evaporated Milk.
Method
In a large bowl, Rub marg into flour. With a large wooden spoon. Mix in fruit and sugar, eggs and Evap milk combined.
Spoon into 2* 1lb loaf tins or 1* 2lb tin.
Bake in centre of oven as follows:
Gas Mark3 for 1hour then Gas Mark1 for ! hour.
Elec 300F (150c) for 1 hour then 200F (100c) for 1 hour
Fan assist 140c for 55mins then 90c for 55mins
Allow to cool on a cake rack. This cake is even tastier if left for two or three days after baking but, hey I want some now.

Brien I've got the staff mixing one up as I type this. Bet it will not taste as good as the one you brought with you to Hilton.

Hi Jane, It was good to meet you at Hilton. There's plenty fruit in the cake and nowhere for it to go. I'm sure your's will turn out perfect.
