Is this just a regional thing or not. My Grandmother Made some of the best corn light bread every summer to go with eating pork bar b que. I have tried to make it and it never comes out tasting the way hers did.



Do you have a good recipe for it.



I remember her using butter milk and putting the mixture in a bowl with a cloth over it and setting it in the sun for awhile.

Moisten 2 cups waterground meal with cold water. )Add 2 cups boiling water and let rise overnight in a warm place.   Add 1 cup buttermilk, 1 teaspoon soda, 1 tablespoon salt, 1 cup of sugar, 1 cup of flour, 1 pint   warm water,1 quart meal to make a batter which will streak the spoon.  Let rise 1 to 11/2 hrs. Bake in a greased pan 1 hour at 375 degrees. Cover and leave for 24 hours.



 makes 2 loaves Corn Lightbread
