First it's Lobsters and now Ruebens. I've got so much drool on my desk I need a wet/dry vac.
How about a Lobster Reuben. Could be the next best Fair Food. Maybe batter it and deep fry it too!

My Reuben:
In a steamer basket place in order:
Corned Beef, thin slices layered about 1/2" thick
Sauerkraut (I use homemade) about 1/2" thick
Gruyere cheese slice
Steam until cheese melts.
Place between slices of Rye bread (buttered on outsides) with a generous helping of Reuben sauce (below). Brown on each side.
Reuben Sauce:
1 Tblsp mayonnaise
1 Tsp chili sauce (or ketchup)
1 Tsp horseradish
1 Tsp chopped dill pickle
Salt and pepper to taste
Mix all together.

The Ruben sauce mentioned above sounds really really good.
The Boardwalk Café also mentioned above uses a sauce although I’m not sure what is in it but it just elevates the sandwich to a whole different class.
I’m going to try and make the above sauce.

I wish you people wouldn't post about stuff that makes me hungry. I'm on a "doggie diet." My Pyrenese stays in the house when it's hot out, and since he weighs about 150# and wants to "share" everything I have, I 1) have to be careful to only eat things that aren't harmful to him, and 2) don't eat much. I don't want to take the time to make a reuben sandwich just to feed my dog.

I like Reubens with a hot mustard rather than the Russian Dressing.
Another variant is the Cold Reuben- sliced corned beef (I prefer black pastrami), Swiss cheese and cole slaw.

Love Reuben sandwiches....WITHOUT the thousand Island dressing they slather on it here...that sweet pickle **** in that dressing just ruins it. Dill would certainly do better. I'm a horseradish, dark mustard, & a touch of mayo person on my Reuben. Goes alot better with the kraut....although that Reuben sauce up top here (mullie1) looks promising...I'm still partial to the mustard/horseradish tang more so than anything with a tomato base when Kraut's on the sandwich.

A year ago I was having lunch in Passau, Bavaria. They served a Wiener with shredded horse radish, mustard and a pretzel. No roll, no tatties or veggies, no hardware- just dip the Wienerwurst into the horseradish and mustard and nibble away.

I like to fry up some diced onions with the sauerkraut. When I make 'em at home I use pastrami, Swiss cheese and seed mustard on sunflower rye. I don't use any sauce.
There are two places in Peterborough where I teach on Wednesdays that make great Reubens. Sam's Deli makes a messy, but delicious Reuben with a delicious sauce. I've asked Sam, but she won't reveal what's in the "secret sauce". The Spill presses theirs in a sandwich press. They're not messy at all, but they're delicious.
I have a friend who hates the taste of sauerkraut and makes his "Reubens" without it. To me, this is just a corn beef sandwich. The 'kraut defines the Reuben.
