We have had this recipe for a long time, and is very very good with a hot bowl of chili or beans. Or anytime really. A slice cut in half with some butter melted on it and it is fantastic.
1 cup yellow cornmeal
1/2 cup all purpose flour
1/2 tsp. baking soda
1 tsp. salt
1/2 tsp. sugar
1 cup cream style corn
1 med. onion, chopped
2 or more jalapeno's, seeded and chopped
1/4 lb. sharp cheddar cheese-shredded (last time I used Colby)
1/2 cup vegetable oil
2 eggs slightly beaten
1 cup buttermilk
Preheat oven to 450 grease an #8 cast iron skillet. (I use the #8 because it comes out to a good height when done) In mixing bowl combine dry ingredients. Stir in next four ingredients, combine remaining ingredients, and add to the dry ingredients, stir only until dry ingredients are moistened. Turn into skillet, bake 25 - 30 minutes or until lightly browned on top. Remove from oven and let stand at least 5 minutes before cutting.
It comes out firm and does not crumble and fall apart.

I'll grease my skillet (plenty of oil) put it in the oven as it preheats, when you pour in the cornmeal mixture it'll sizzle and make a pretty nice crust
