I just read where Russia is no longer buying U.S. chicken.
They mostly bought legs because they like them better than the breast meat.
They don't sell as well over here because people don't like those "icky" tendons.
I love chicken thighs roasted in the oven!.
The price of chicken wings is crazy!. I remember they used to give them away.
Cooked low & slow in soups,stews & stocks they can't be beat.
Lets hope there's a glut in the market. They do have more fat but they have more taste & vitamins.
If you cook them on a rack above a pan you can render out a lot of the fat.
Everyone is watching their pennies these days so a chicken leg,a potato & a carrot is a cheap healthy meal.

the thigh has always been my favorite part of the chicken - same thing with turkey. My favorite way to cook them is over lump charcoal in the Big Green Egg with a chunk of apple or fig wood in there for smoke. In the last 10 minutes I'll paint them with a mix of KC Masterpiece and Tabasco Chipotle sauce. DAYUMM they're good!
When they're on sale I'll buy a mess of them and smoke them up without the sauce. Then I pick the meat, portion it and vac pack in 8 oz for the freezer. I love smoked chicken jambalaya

Don't like the wings. Some of the leg is ok. Do like the thighs best. Breast can be ok if it's moist enough and flavored well.

I love thighs. They are much better than breasts. My brother and his family came to visit a few years ago. The kids were maybe 10 & 11. My wife & I put a big batch of thighs on the grill. The kids looked at those and said to their mom "Mom, what kind of chicken is that? We've never seen chicken that looks like that before. Eewwww." So, I surmized that "mom" never cooked anything but those "nice, clean, no fat, hoity, toity, breasts. Those kids don't know what they are missing. (they wouldn't eat them). Granted, there is a place for chicken breasts in my food, but it is not if I am going to eat simply chicken, like on the grill or whatever. Breasts are for cubing up and putting in a stir fry or something like that. But breasts by themselves? Eewwww. ![]()

I marinated a bunch of chicken thighs this weekend for a few hours in nothing more than Frank's Red Sauce. Threw 'em on the smoker with a little apple wood. Fantastic. I'm with Padman, breast are too dry and tasteless (okay, okay, they're healthier)

I'll soak the wings down in valentina hot sauce , let it sok for a while, then grill them, pretty tasty and cheap seasoning

String Chicken
-skinless/boneless chicken thighs ( a dozen will fill a 9" pyrex pie plate)
olive oil, season salt, garlic powder, S&P in the pie plate.
make up dressing with fine bread crumb, very fine dice onion, chicken stock, Italian Mixed Herbs (OR curry powder), S&P
Moisten the dressing and let it stand. Has to be just damp enough that you can squeeze a handful into a little cigar.
Cut 16-18" lengths of cotton butcher string, one per thigh.
Make a cigar of dressing, put it in the thigh, wrap with string just enough to hold it shut, cut-side down in the dish.
Bake covered 400F for 30 minutes. Uncover, add the remainder of the dressing to soak up the juice,
bake uncovered another 30 minutes or until you see the loose dressing start to toast.

We were eating KFC one time and this really funny buddy of ours watched a guy pull the skin off a piece of chicken and push it to the side of his plate.
Buddy says " What you don't eat the skin??!!".
The guy said something about it not being too healthy.

I like fried chicken on occasion - doesn't matter which part cause I'm all about the greasy, crunchy outsides. Fried chicken out of a cast iron skillet, mashed potatoes and corn ala cob.
My favorite though, and what I get dying cravings for - is Buffalo style hot wings with bleu cheese and celery and a cold beer - preferably a homebrew - hence my sign-on.

I'm the weird one I like chicken breast. Linda Lou has a way of steaming it before she browns it in a frying pan and it is moist. It make me drool when I see a plat coming. Of course I like the skin the most as I'm not supposed to eat that.![]()
I like wings too and if I'm forced I can eat a thigh and enjoy it a little.
KFC regular I thought I love all of it till last week, it must have been left overs, was a little like shoe sole.![]()

Occurred to me one day that I'd like to have chicken & dressing for supper but to gnaw on a whole bird for the rest of the week seemed ridiculous. Looking at a styro tray of boneless/skinless chicken thighs, I got the inspiration for "String Chicken." You can substitute curry powder or do the Cordon Blu thing with ham & cheese. Eat what you want, freeze the rest. Always the correct serving size.
Recipe was about halfway down P1 of this thread (but I prefer cotton butcher string.)

I've had bacon wrapped chicken livers.
Those bacon wrapped breasts covered in peppers look like they'd be tasty too Randy.
Fajitas are a good one pan way to use chicken.
KFC has that gravy like thin wallpaper glue.
Stuffing ham & cheese into chicken is never a bad thing.
Beer can chicken rules!.

Water + some Oregano = fine. I can't imagine wasting a bottle of Dead Frog Nut Brown Ale for this.
My caveat is that I don't eat chickens that I don't hunt myself. 100% Ruffed Grouse (57 birds) last Fall.
