Unusual foods and recipes seem to be popular this week.
I came up with this recipe on the internet.
I've actually had this, it's an old cowboy recipe from the cattledrive days.
Was not half bad - if you don't think about what you are eating.

Scrambled Eggs with Sweetbreads ( cow brain )
4 eggs
1/2 cup milk
1/2 teaspoon salt
1 sweetbread, parboiled and cut in dice
1/8 teaspoon pepper

2 tablespoons butter


Beat eggs slightly, using a silver folk, add salt, pepper, milk, and sweetbread. Put butter in hot chafing-dish; when melted, pour in the mixture. Cook until of creamy consistency, constantly stirring and scraping from bottom of the pan.

Sounds great! Sweetbreads are delicious - although, as a recovering restaurant chef, I always insisted that the waitron units made sure the customers understood what they were ordering prior to sending the ticket to the kitchen.

I had scrambled eggs and sweetbread yesterday....only the sweetbread was cinnamon raisin, toasted, with butter.
