Google says Klean Strip Premium and Citristrip can remove wipe-on polyurethane, though you might have to let the product sit on the finish longer.

You might follow up with a paint remover wash to final residue. I expect some sanding will be required.

Most solvents will damage bindings if you have them. I did one successfully by scraping.

Though I have not refin'd a poly coated banjo in 40 years, I remember heating the finish with a hair dryer made it easier to remove.

Mind if I ask why?

Maybe there are other remedies that don't require removal to wood.

I've not had to remove poly, but Citristrip does a good job. I tape off celluloid just in case and scrape the finish near it.

A good, sharp card scraper is really fast, with minimal exposure to chemicals.

Be very careful using heat to remove poly finish if you have plastic binding.  DAMHiKT.
