I want to play this song after the Johnny Cash version but in CH. What tuning and chords would one use?

Are you planning on singing it? Play it in the key you sing in.

I play/sing TS out of G tuning ( lowered down to 'D with Minstrel Nylgut strings). I use the F chord quite a bit and a couple bar chords in the chorus. It sounds a bit "wacky" but hey, it's a wacky tune. Have fun! banjered

Either G tuning or double-C tuning can work.  As Bill H says, find the key where you can sing it.  Most guitar chords sites show the key of A for Johnny Cash and key of D for Doc Watson.  You can transpose from A to G to play chords for open-G tuning:

From    To
Chord  Chord
   A  -     G
   G  -     F
   E  -      D
   D  -     C
