I am constantly practicing my banjo rolls when not actually playing. I practice on my know, countertop, etc etc. Hundreds of times a day. Since I am not practicing on actual strings, has anyone experienced issues with this method?

I do this all the time. Especially on the edge of my car seat, or steering wheel, to the music on the radio. This is also how I warm up, on the way to a gig or jamming with my friends. What started as nervous tension, has become part of a very effective routine.

I've picked on my thigh about as much as I've picked on my banjo. Worked out some arrangements that way.

I remember doing just that when I was learning. I still occasionally will pick on a tabletop or my thigh if I'm not near the banjo and just have a thought about how something should be fingered.

I'm spending the month in Palm Springs, CA hiding from the frigid Midwest. I brought my guitar with me, left the banjo home. Every once in a while, out on the patio by the pool drinking a margarita and strumming the guitar, I tune the first string back from E to D and the fifth string back from A to G, and I have a banjo to play. It isn't ideal, but just for keeping the fingers going in the right places, it works.

You’re in good company.
