According to the “Southern Living” platform, the number one searched southern pie recipe is fig pie. We like fresh figs and fig newtons, so why not. I made one. I have been using Lee Bailey’s short crust recipe for decades. ( it’s kind of French using both frozen Crisco and butter.) I would have used all black figs but had to settle black and brown figs. Later today whip up a batch of heavy cream, then tonight-enjoy…I hope. Brad

BTW, if you are not familiar with Lee Bailey (GRHS) Wikipedia him. He was truly my mentor through his cook book series, back in the 1970s-80s after Julia, before most of other southern chefs, and before internet. Brad

Different strokes. I never liked fresh figs. Mother had 5 fig tree/bushes and I used to go over there a couple of times a week and pick ripe figs for her. She made jelly/jam and also just washed them off and ate them raw. Sorry, not for me.

The crust was as hoped for. The custardy mixture was set and the ginger came forward. The baked figs were very delicate. Overall a nice dessert. I will like it better tomorrow, as it will chill overnight. Brad

Never heard of a fig pie.

Best pie from down south ways I’ve ever ate was my grandmothers Buttermilk Pie!

Try one of them on fer size!

I get that... but for whatever it's worth, one of the most mind-blowing appetizers I ever had was fresh figs, slightly hollowed out and stuffed with goat cheese, then wrapped with prosciutto and baked. Genius. So not exactly raw, but starting raw.

Musical side note: the restaurant was outside of Boston and partially-owned by a couple of members of Aerosmith. Which may give some even more reason to hate the idea, but it was kinda cool to see one of Joe Perry's guitars on the wall behind our table.

I would make a good fig pig !!! Never heard of fig pie either and figs in da U.P. are not a thing, that I know of. I love anything fig. And to Dow, that Buttermilk pie is right up my alley too!!!

Liz here: the appetizer Al is referring to was from a hangout member, called IIRC Angels on Horseback. Dried fig split and stuffed with a smoked almond and wrapped in bacon. Doused in teriyaki sauce and grilled. We brought a plate of them in and they lasted less than a minute.

Skip, those fig treats sound good.  We have a few left, and may give them a try.  One problem may be, Marilyn does no like goat cheese (I do).  If its not blasphemy, what substitute cheese would you suggest? (though Marilyn like exotic and cultural variations she also has a distaste for sheep/feta cheese).   Also, how do you hollow out a fig?

A mild, creamy blue cheese like Saga would work great.

As to the latter... a spoon.
