Hey y’all. I’ve endorsed Fossey Guitjos for over 10 years but, I’m ashamed to say this, I’ve never changed the strings on mine. Haha.

Until now…

Does anyone know what strings, the gauge, or anything for this guy?

I have seen that Deering makes a full set. Might be what you are looking for.
I have not heard of Fossey Guitjo. I’m going to try to find out about them.

I haven't seen a Doc Fossey guitar for several years, so I don't remember what kind of tailpiece it has. Does it take ball end strings or loop end strings?
Gold Tone sells a set for their Dojo that would probably be the right gauges. Check them out and find out what gauge strings they use. They would work if the Doc Fossey has a fixed tailpiece and a banjo bridge. If it has a guitar bridge, you could get individual ball end strings in the same gauges and build your own sets.

I just looked up images of a Doc Fossey guitar-banjo and it has a guitar tailpiece so it would need ball-end strings.
The strings Gold Tone sells for their Dojo are listed as .012, .026, .018, .016, and .012. Ball end strings in those gauges would probably work.
