Three ripe pineapples on the tailgate of a pickup truck

 

We had 21 pineapples on the stalk this year.  We've picked 8 and 13 are getting ripe by the day.   Anybody got any good ideas what to do with these.  It's funny because we have a new Kroger delivery service in town and we got some groceries delivered.  The driver wouldn't take a TIP but he lit up when we asked him if he wanted a fresh, home grown pineapple.

I'm seriously thinking about wrapping one in bacon with a pork tenderloin stuffed in the pineapple. Yeah, pork tenderloin stuffed, bacon wrapped pineapple in the smoker.  I see an FF post. Coming.

Peel, slice and core one, arrange in a greased skillet with cherries in the gaps.
Layer a load of corn bread onto that and into the oven.
The pineapple might be a nice change from molasses.

We make shish kabobs with pineapple, shrimp, chicken and whatever vegetables we have on hand.
