How do you keep Canadian bacon from curling in the pan ?

I’ve never got this no man’s klaychure straight - if Canadian looks like ham,,,then what is back bacon?

(and,,,I've never seen any little brooms in a frying pan, fcol!)

Sounds as though we might use similar terminology Chuck.  Back bacon here is the loin and a little b it of the belly - making a slice(rasher) almost comma shaped.  It can be smoked or in smoked but if  it is smoked that is done at really low temperatures so it has to be cooked before eating.

Yept! Jonty. I can get a pork loin around 12 or 14 pounds for 25 to 30 bucks.

I actually had a few guys ask me recently If I still made bacon. I need a dedicated man fridge,

Wife gave some to a workmate that cooked breakfast for his new girlfriend. Wife said new girlfriend said " Who is this guy?"

When it hits the pan you can smell the herbs & spices & the Canadian maple syrup you know it's not that pre formed Scrawny Ronnie crap in circular shape on a breakfast Mc egger!

I just skip the peameal. Candian bacon is American bacon!

Crikey! That's an amazing price.  From the looks of things, you and Terry ought to open up a bacon butty shop - you'd make a fortune with that amazing bread and bacon.

id definitely recommend the 'man fridge', I combine mine with a separate cutting/curing table - it keeps the peace and lets me keep playing around without messing up the family' kitchen

Begin by buying a kg of Mitchell thick sliced bacon.
Dice to 1/2 inch and fry the works. Use a handful to garnish many dishes.
Maybe buy 2 kg so you have enough to last until next week.

Chicken Cordon Bleu? They don't know the half of it.
Use Mitchell heavi-smoke (nearly orange) bacon instead of some weak-kneed ham slice.

Canadian bacon will not curl if you hurry hard. We all know that. I miss the slap of the straw.
I'll serve that bacon with spuds. Local organic bakers, delivered to my front door.

We buy Mithchells' here too.Brian. 

Hertels Is a local company that has a lot good cured & smoked products here in B.C.

Bake , Boil or Braise one of their smoked pork hocks is the base for a freakin' good meal!
