I have a stainless steel smoking box I stuff with all the ingredients. Fresh rosemary.thyme , hickory chips & a bunch of allspice berries!  Smells Awesome!   I wish I could get pimento wood.

What's missing from this vid is how long it sits, and how, before use.

Ready to go then and there? Wants to sit in the fridge for a while (given that it's Jamaica, probably not). Wants to sit on the counter for a week, two weeks, longer? Unclear - though with the vinegar, probably not.

I have 3 X 1.5 liters of various fermented hot sauces aging over toasted oak cubes in the garage - we're coming up on two years with them. This fall, I shall remove the oak, add vinegar, puree, strain and bottle.

Fermenting veggies is a fun process - and occasionally, a messy one. I just put a three-week ferment of sauerkraut in the fridge - I'll have to burp it a few more times before it settles down.

In my own defense, I hear tell eating fermented foods helps protect one from Covid. It must be true. I read it on the Internet.
