Five things about your request:

  1. What style do you want? Three-finger or clawhammer or else?
  2. What do you mean by " a little easier"?
  3. What do you mean with open C? Usually open C means gCGCE, but I think you may mean drop C or standard C: gCGBD (?)
  4. Some tunes are very difficult to  make easy without loosing the flavors of the tune.
  5. ETB has been recorded in a lot of different versions. Do you have a favorite version. If you get an easy tab of a version you are not familiar with, you will only become disappointed.

Sorry. 3 finger scruggs style. Played out of Standard G tuning with no capo. Basic melody is fine just so i can play break after mandolin players kick off.

Mike Hedding is selling the tab and recordings on his website. You can watch and listen to him playing it on Youtube. You don't have to be a member of his website to purchase tabs/recordings. I play that tune on the fiddle, but haven't heard it played by banjo players very often.

I am careful about working very hard to learn difficult tunes, then discovering that they aren't being played. I have to be especially appreciative of a tune and want to play it for my own enjoyment before I start learning how to play the tune.

I agree with wilbanjo. There are a tab in the tab archive that seems to be some easy. I think it is difficult to make an easier version and still hear that it is East Tennessee Blues.

And if you want an easy break, just take the chord positions and make  out an own variation based on forward rolls and pinches, holding the chord positions as in the tabs in the archive.
