What difference in tone would you expect from a "Pre-EPA" Remo head vs a 5-Star on a Stew-Mac arch top kit banjo?
Any difference will be negligable. 5 star heads can be cranked down very tight, but overall I would not expect much difference.

The 5-Star head will give you more bass, a little less pop.
The 5 Star will have a favorite tension where the Remo will have a broader range of tone.
For a deeper tone try a quarter deflection at the bridge under a 9 1/2" straightedge.
