I was gonna have a baked potato with cheddar and sour cream, but then I said, why not some bacon? Then I said, why not some eggs?...sauce?

I oiled a russet potato with peanut oil and sprinkled a bit of salt and pepper on and stabbed it with a paring knife in a small 'X' shape about half an inch deep. Then stuck it in the oven on aluminum foil at 400F for an hour and a half until the skin was crispy. Removed the potato, cut deeper and pinched the ends to open the spud up and put in a few slices of butter, a small handful of cheddar then cracked two eggs on top and put it back in for 15 minutes. Make sure you make a pocket that your eggs and cheese will fit into comfortably without pouring out. While the concoction was baking I cooked up some bacon (2 slices, but 1 would have been fine) and reheated some hollandaise sauce I had on hand. When the eggs had firmed up a bit I topped them with the sauce and crumbled up the bacon on top. This was very delicious and I'm going to make it again. The potatoes were soft and delicious, and the skin was crispy and crunchy. Try it, you'll like it.

Nice Mike! We have eggs Benny for every long weekend. Terry makes potato pancakes & we build on that. Swiss or havarti cheese, bacon, bearnaise sauce poached eggs & more sauce with a side of bacon. 

  That sounds like a boat full of heaven! 

I can't seem to sell the idea of Hassleback potatoes. Pick a nice shaped russet & lay it between some wooden spoon handles have fun with your knife. I baked them with chives in between the slices to hold them apart. Slices of cheese too.

bubbalouie, my Mom makes hasselbacks, with sliced onion and butter in between the potato slices. I am also a big (and getting bigger) fan of potato pancakes.

Felt the arteries clog as I read that, but I'm gonna have to try it. Haven't figured out how to have leftover hollandaise though.

If you thought that was bad, you should stare down at a Hillbilly (Country) Benedict. Big fluffy bisquit sliced open, each side toped with a sausage patty & egg (any way you like it) topped off with sausage gravy. Usually served with a side of home fries or hashbrowns. cheeky

In recent years, I have become a big fan of double-baked potatoes.
Bake the first time to cook them. Bake the second time, tricked up in a dozen ways.

Mooooo's example is a real show-case.

"Smashed Potatoes" and "Slicers" (above) are favorites.
Potato skins with onion/cheddar/Worcestershire/bacon are good, so is ham & pineapple.

Local organic farm is selling bulk bakers, the best I have ever eaten, whatever that variety is.

Bacon makes everything taste better when wrapped with bacon. So that goes to figure, bacon wrapped bacon must be heaven!
