I love living in a small village but one thing I do miss from being in a town is access to post pub takeaway food - especially the doner kebab, which I think you guys mistakenly call gyros. Stumbling home leaving a trail of salad and grease drippings and waking up with a hand that smells like you’ve done an internal examination on a Sasquatch (sans glove) was part and parcel of a good night out with the boys. Well tonight I’ve got some mates coming round to help me christen the new shed brewery so I thought I’d try and provide some late night sustenance. I’ve got ABTs made and a load of wings to smoke later but I’ve had a lamb shoulder in for a few hours now. I’ve made the traditional cabbage based salad, got the pitta read and bought a variety of kebab shop condiments, most of which have adorned the front of my shirt on numerous occasions - it won’t be a faithful homage to the ‘elephant leg on the rotisserie’ but hopefully after several pints (good English big pints) of wet spaniel brewery beer they will taste good...... is 16:45 and still at my work desk too early for a beer?

What was your selection of smoke woods for such a repast?
The rest of it appears complete. I'd need a roll of paper towels.

You and me both Brian - I’ve just put a new roll on the bench alongside the sauces!

I’m using some mesquite on the lamb, I really like it, not too much rub either as I really like the flavour of the crispy skin once the fat has rendered out.

....yep...  eat, drink and make Mary .... anything to help her deal with seeing her little lamb in the smoker.  wink

I was gifted an entire apple tree, all bucked up almost ready-sized for the smoker.
Really quite a sweet smoke that suits lamb shanks, chickens and pork side ribs as well.
Mesquite would come next, before any nut-woods like hickory.

Defintely not. Here in the Aust Govt, on a Friday the email comes out about an hour earlier for a 4pm start.

I didn’t get any pictures because I was erm, a little tired. It was brilliant, the skin crisps up with a nice bark, the fat renders out and it pulls beautifully leaving a completely clean bone. Served in a warm pitta bread with shredded red/white cabbage & red onion with a little lemon juice and chilli sauce. Absolutely lovely accompaniment to a few pints.

Damn Jonty, your makin my lips drool !!! Lamb gyros, tacos and the likes all sound fantastic, not to mention I like my pints too.......especially big ones !!!
Hope your mates appreciate your time and work you put into the christening!!!

When I lived in Milwaukee, there was a little BBQ place in a not so nice side of town, but they served barbecued goat with bread and butter pickles and buttered cheap white bread. They were open late at night and after we closed the bars, it was our go to spot for soaking up all the alcohol we consumed, or so we thought. It was amazing!!! The smell of their smoker in the back alley was intoxicating itself .
Enjoy, and congrats on the Grand opening of the Wet Spaniel Brewery Shed !!!

Cheers Dale.  I like the sound of barbecue goat, I love goat meat.  I might have to get me a shoulder and put it in the smoker.

Gee Jonty, I don't know what your guys's gyros are made of, ours always smelled good, of course we always wash our hands afterwards! That lamb looks good. I need to get ahold of one of our local ranchers and see if I can get some lamb.

Love to see lamb food talk, its a mystery meat to many Americans. Grew up around some Armenian people and they introduced me to old world shish kebab, ONLY lamb. Ate many a Donner in Germany when I lived there and now they are popular here in Japan.
Nowdays most of my lamb cooking is North African tagine, or my FAVORITE Arabian shawarma, Arab version of a Donner, served in a flat wrap seasoned with amazing Arab spice arrays

Looks like you guys were having a hoot in da new Brew Shed Jonty !!!
I’m still drooling about the lamb, and then Scott Zimmerman has to go mention tagine cooking and schawarma ............2 more of my favorites. It’s a damn good thing we all don’t live near each other or we’d be tipping the scales over !!!
