For chicken gumbo? Tonight's dinner: chicken thighs and andouille sausage gumbo, made with a product I've never seen before: diced tomatoes with jalapenos and habaneros. Brown roux - no okra for this New England household! (And I've never been able to find file powder.) Al had 2 helpings!

I'll be over in a minute.
Use a lot of chicken thigh = best part for taste.

You can order file off Amazon. Tony Chachere’s or Zatarain’s are the only brands I’ve ever used. It’s ground sassafras leaves. You put it in before you serve it. My mama usually used okra. I was born and raised in Louisiana

Forgot the bay leaves.
I thought I had chicken broth (I didn't) so I used a combination of water, white wine, and a splash of soy sauce instead.

Hey fig I think by the looks of your dish I believe Liz made a sauce pecan ( google the recipe) which is made with tomatoes and the peppers a gumbo is more of a soup type served over rice of course. But it does look very delicious( he said licking his lips)
