I love this tune, which apparently can be played as an air, a hornpipe or a set dance. I am playing the latter two settings here, but why do they sound like two completely different tunes?

The name of a tune is free for the taking. I've heard "The Cowboy's Prayer" in both very sacred and very profane versions, and both the melody and the lyrics are quite different in both.

That's the way it is with old songs. Even when the songs aren't really old at all.
