"Clawan" Dan Levenson (www.Clawdan.com) teaches Polly Put The Kettle On - a three part version. After a short introduction, Dan starts by playing the tune 3 times through from basic to advanced up to speed then slowly before breaking the tune down (both basic and advanced version) phrase by phrase. You get a full on view, a left hand then a right hand view for each phrase.
The tune is currently available in Tablature form in Dan's newest publication, Old Time Favorites for Clawhammer Banjo (Mel Bay 30224). A fiddle version will also be available soon on the Fiddle Hangout with standard notation in the corresponding book Old Time Favorites for Fiddle and Mandolin (Mel Bay 30225) which are available from Dan through his website.
