Is there any particular software I can use to split videos into just the picking and fretting hand areas on the same video?
I've got some I need to do this with to honor my friend and get them learned asap.

Can't help you with particular software. It's out there, and some of it is free.
Assuming you are working with already recorded videos. I'm thinking you would need to have 2 copies of the video. Actually, I'd make 2 copies of the original and work with those. Give the copies different names, like Name of song_copy 1 and Name of song_copy 2. Crop one showing the picking hand, then crop the other showing the fretting hand. Or just leave one copy alone and crop one showing just the picking or fretting hand. Then use a picture-in-picture (PIP) feature in a video editing program so that both videos will be in the new video. I'm also thinking you may want to turn down or delete the sound in one of the videos, just in case the timing isn't perfect when you put the 2 together with the PIP feature. Maybe some trial and error there. Here is a link to a page showing one example of how to do the PIP editing (I haven't used the software, so I won't vouch for that; Google "best free video editing software" to find something...and if you have a Mac, IMovie will probably get the job done). Couldn’t you just record 2 video streams at the same time, say one from a computer webcam and another at the same time on a smartphone. Then use iMovie to embed one into the other.
That is, if you have iMovie or something equivalent.
